I have, in the past settled debt for 50% of the total owed to a collector, who then writes it all off.

But is there anyone out there who has had success with a not for profit org who helps you settle with creditors?

Could you give an example of some of these options? I am not sure what there are out there.

You can do this with hospital bills. Like if you owe a certain amount of money but only can pay half of it, then they will take that and write off the rest that you owe.
